(Heaven and Earth – Modified from Betty Crocker’s International Cookbook)
4 cups peeled red potatoes, cut into chunks
2 Gala apples, cored and cut into 8 slices, then cut in half crosswise
1 tablespoon sugar
4 slices bacon
1-1/2 cups sweet onion, sliced
1 tablespoon butter
Heat four cups salted water (1 tablespoon salt) to boiling. Add potatoes, apples and sugar. Heat to boiling; reduce heat, cover and cook until potatoes are just tender (about 10 minutes). Drain and place in serving bowl. Place little dabs of butter over top to melt. Cover and keep warm.
While potatoes and apples are cooking, fry bacon until crisp. Remove from pan and set aside. Saute onions in the bacon fat until soft. Dice bacon. Stir onions and bacon into potatoes and apples and serve.

Pasta Pomodoro is a classic Italian dish made from few but fresh ingredients. It is best made with tomatoes picked fresh from the garden, but in the months when the only tomatoes available are the tasteless ones at the supermarket, you can get close to that fresh tomato taste by slowly simmering the sauce using canned tomatoes. It tastes light and fresh with just a touch of heat from the red pepper flakes. One bite draws you in for another and another. Enjoy with Glorie RED MONKEY or RED QUARTET.
