(Wreath Fineries 2013)
1 lb. sharp cheddar cheese, shredded
8 oz. pepper jack cheese, shredded
4 oz. diced pimentos, drained well
1-2 diced scallions, including green tops
1/2 teaspoon garlic powder
1/2 teaspoon coarse black pepper
1/4 rounded teaspoon cayenne pepper (or more if you like added zing!)
2 teaspoons Worcestershire sauce
1-cup Hellmann’s mayonnaise
4 oz. whipped cream cheese with chives, softened (1/2 of the container)
Please purchase blocks of cheese and shred it yourself; don’t use the pre-shredded stuff for this recipe. It makes a difference!
Shred the cheeses into a large bowl. Add the pimentos and scallions, and stir with a large spoon to mix and distribute everything evenly.
In a small bowl, use a whisk or a spoon to blend the mayonnaise, whipped cream cheese, seasoning, and Worcestershire sauce until smooth.
Blend the mayo/cream cheese mixture into the large bowl of mixed ingredients until everything is blended well. Cover with plastic wrap and store in refrigerator overnight.
Remove the pimento cheese from the refrigerator an hour prior to serving. Stir with a spoon and serve with Ritz crackers (traditional) or a cracker of your choice. And remember, this first course is made even more delightful when paired with GLORIE wine!
